Delicious to drink on its own, with blue cheese, chicken liver, dark chocolate. Excellent as a meditation wine.
FERMENTATION AND AGEING:
The grapes are dried for about 3/4 months in crates. Weekly manual control and selection of the grapes during drying. Pressing in a vertical press. The must then remains with the “mother “* for many years in fine oak casks with a capacity of 70/90 litres. It is bottled and marketed in 0.375-litre bottles.
*Mother: is a kind of thick, dark sediment. Formed by families of ferments and/or yeasts that have the ability to live and multiply (in such a sugar-rich environment as Vin Santo must, usually deadly conditions for the common yeasts used for wine) passing on from generation to generation.
